Twin Pickles Snack Packs

Oh you GUYYSSSS!!!  I have missed you all!  I want to take a minute to extend my thanks and gratitude for the prayers, light, love, and well wishes  you have all sent through social media.  My family has endured a lot of loss in the last 2 months, my mom and then my brother.  I am getting back to what they both would want me to do, and that is cooking!  Cooking and sharing, they were two of my biggest fans.  I love you Mom and Jimmy......

Let me introduce you to the cutest little people on earth.  This is Emmi and Logan.  They are my 2.5 year old twin grand babies.


When I returned from my brothers funeral, I decided I needed a day with my littles.  For those who just arrived to the party, I call my grandchildren my littles.   I also call them my "pickles".  Sometimes sour and sometimes sweet! HA!   I had not seen them in a week and it was time to hear some laughter and do some hard core playing!  We decided to make our own snack packs.  Are they any healthier than trail mix, etc you can buy in the store?  No.  In fact, I planned to pop my own popcorn, but just cheated with some store bought cheddar popcorn.  Are they better than gummy snacks?  Definitely.....in my recent chance meeting with an oral surgeon who decided to keep 4 of my teeth, I was watching some information on the damage they do to kids teeth.  Ick.  Really this was just a fun way to start letting them help in the kitchen, be excited about what they are eating and yes, I think it is far cheaper than anything you buy in the store.


Also, the teacher in me was super excited as well.  They would name each item they took out, we would talk about what color it was and they ate every single thing.  I threw in a few M&M's for fun, and a few chocolate covered raisins as well.  If your children or grandchildren like something more than another, add more of that.  Add tons of everything, or omit what you don't like.  This is not really a recipe, just the portions I used.  The world is your sandwich my friends, make it like you like it!  Also, my grandchildren have no nut/peanut issues, so that is completely of course, based on your kids.


Now, could we have put these in cute bags with a cute tie or something?  Yes....but these are just for home, and freshness.  We used Ziploc bags.  Fill them as much or as little as the little people (or big) will eat or enjoy!

Here is how we did ours!

5 cups Cheddar popcorn (or pop your own!)
4 cups pretzels
3 cups goldfish or cheddar crackers
2 cups dried, diced pineapple
1 1/2 cups mixed nuts
1 cup M&M's
1 cup chocolate covered raisins

Mix all ingredients in a large bowl and portion out into resealable baggies!



Spend some special time with the children in your lives.  When you are feeling some of your darkest times, they will lighten your heart like a beacon of hope and love.  They laugh, they love, and they bring about a feeling of renewal.  When kids help in the kitchen, I find they are more willing to eat what they help make.  Perhaps not in every case, but in many.  So spend some time with them, no phones, no tablets, no video games or movies, just give them your undivided attention for a little while!!!  It sure brightened my day.......  I hope you enjoy my "twin pickles"!

Easy Homemade Caramels

Life lessons.  We all experience them, we all learn from them hopefully, and sometimes they sting.  Or wait, sometimes rather, they give you 2nd degree burns, on your feet!


OK, so maybe 2nd degree burns is a little over the top but, my heart will not get over how freaked out I was!  When people tell you to read up on candy making or watch a video, talk to others who make candy.....yeah, you should probably do that.  I only tell you that because, I DIDN'T!

For a beginner this is really an easy recipe.  I think when you make candy you need to start out easy.  And make sure you have access to a candy thermometer or you will end up using a meat thermometer.  HA!  Or you can ALMOST forgot what is bubbling and stick your finger in it to taste it.  I am a mess friends, a hot, bubbling over mess.  When my temperature got to that very anticipated "firm-ball stage", I kept the pot on the burner, shut off the heat, and added my vanilla.  DUH.  It blew up, a small explosion but none the less, is scared the hell outta me. I will make these again because they are so easy, but my candy making days are over.  If you need a recipe for candy, ask me, I will refer you to a good website!

One thing about these caramels, is you MUST prepare the pan well.  I mean, when I tell you that you MUST, you MUST.  I used foil, but in hindsight I would use parchment and then I would spray the heck out of it with nonstick cooking spray, maybe even like 4 times over.  Yes, use parchment.  I also used parchment to individually wrap them, waxed paper is a good alternative.  If you cut these into 1 inch squares you will get about 81 candies.  Uh-huh.......start cutting girlfriend/boyfriend. 

These would be a delightful edible gift and if you groove on the salted variety caramel, after you pour the mixture in your pan, sprinkle with course sea salt or pink salt!  Hereeeee..we go!

1 cup butter
2 1/4 cup brown sugar, packed
1 cup light corn syrup
1 tsp. vanilla extract

Line a 9x9x2 baking pan with parchment.  Then spray or butter it WELL with non stick cooking spray.  Set aside. 

In a large pot add all ingredients EXCEPT the vanilla. Clip a candy thermometer to your pot and stirring almost constantly bring your mixture to the firm-ball stage.  This will be 242 degrees F.  This took me about 19 minutes on medium heat.  Don't use more than medium or you will burn your mixture.  Your mixture will be a moderate, steady bubble. 


Remove the pot from the heat.  remove your thermometer, and add vanilla.  BEWARE, you will have a mini volcanic eruption on your hands, so thus, using a large pot!  Maybe if you use a large pot you won't have an eruption but I had one, so I am just putting it out there into the universe, wear socks!

Pour immediately into your prepared baking dish and let cook in the fridge.  When it is set, use the parchment to lift the caramels out and a buttered knife to cut into 1 inch squares or whatever size you like.  I did bigger pieces as you can see.

Snowballs!

I promised to pull out the stops and still get you some easy Christmas (or just winter in general) treats and I WILL!!   I love that nearly all of the recipes I am getting to you this year, are kid friendly.  GET YOUR KIDS in the kitchen, they will love it and you will find they will be more likely to eat what they think they don't like if you let them help cook or fix it!  I know it isn't hard to get them to eat treats, but in general, I found it to be VERY true!  Some of my best Christmas memories are those spent baking with my mom and sisters.

 
I would say I am into snow this year.  But I'm not.  I would say I am into balls this year, but, that...isn't appropriate.  ANYWAY.   That being said, I am not sure where the idea of these came from other than I wanted to make something that looked like a snow ball.  I made some white chocolate covered Valentine Rice Krispy treats last year but they were a bit different.  I went with the traditional rice krispy treats and fancied up the aftermath, so to speak!

I used white chocolate chips but use the melts if you so choose or almond bark.  No biggie there.  For after the chocolate dipping I went with coconut, snowflake sprinkles, fancy flaked sugar, white edible pearls, and I think that is it.  You know I was just in NJ so I picked up some fabulous sprinkles at the Amish Market.  Only to come home and find 9 HUGE bottles of Christmas sprinkles in the big bowl of sprinkles.  Oops.  (teehee)  I hoard sprinkles, apparently. 

Like I said, these are easy, and they will look great on your UNBROWN cookie trays!

6 cups Rice Krispy's
10 ounces mini marshmallows (or regular size)
4 tbsp. butter
18 ounces white chocolate
white sprinkles of choice (and/or shredded coconut)

In a large pot, add in marshmallows and butter.  Stir on LOW until melted and combined.  Add in rice Krispy cereal and mix until ALL combined.  Let sit 10 minutes.  Using a cookie scoop or a spoon, roll into individual balls.  I got approx. 32 out of my mix, but it will depend on how big or small you want your snowballs to be!  When you have rolled them, place them on a baking sheet lined with parchment and refrigerate at least 1 hour, I did mine overnight.  You want them nice and set! 

Dipping and Decorating:
Melt your white chocolate 15 seconds at a time in the microwave.  I use a pint size ball jar for mine, I find it easy to dip in and out quickly!  Stir between each 15 seconds and add a few drops of vegetable oil if your chocolate needs thinned out a bit for easier dipping.  Get your sprinkles, coconut, sugar, whatever you want to use, ready for dipping.   I just used 4 bowls and put one kind in each one.   Using a toothpick or skewer, stab your balls, (omg that sounded horrible but I am leaving it) one at a time, dip in white chocolate, and then GENTLY top on your jar to get ALL excess chocolate off.  Then roll in your sprinkles or coconut or sugar of choice!  Place on your cookie sheet, pull out the skewer and move on.  When you are finished, refrigerate again for 1 hour to set. 

I LOVE these little snowballs.  I love using different finishing sprinkles, and items to give them all a different texture and I love that you expect them to be cake pops and they aren't!  If snowballs could be an elegant Christmas treat, these would be your snowballs!

Fingernail Polish Party Treats

Cute, right?  I KNOW!


A reader of mine on Facebook posted a photo of some of these a few months back.  I seriously almost died.  How adorable?  I had to try them!   And while they are SO cute, I thought to myself, "how good could these taste"?  Well, they rock, if you do them my way!  I used fun flavored candy melts and they are yummy!  While I admit, as an adult, one is definitely enough, kids would go nuts over these!  These would be PERFECT for a little girl (or big girls) birthday party, a girls night IN, and a hundred other occasions.  You could coordinate the colors of "polish" with a party theme.  They are so easy to make, and if I had bothered looking at the recipe that went with the photo that was posted, I might not have been in the state of panic that I was, because....

as usual.........

I didn't look up how to do it.  I went with my own idea and they turned out adorable and the reality is, it doesn't matter how anyone else ever made them, because this method is awesome.   I am going to list the ingredients you need.  I made about 18 of these.  I APPROXIMATE that you can get about 15-20 "bottles" of polish from a 10 ounce bag of candy melts.  I did a small amount of three colors to experiment.  That being said, I will leave it up to you as to how many you need and will make. 

You will need:
Candy Melts in colors of your choice
Midgees Tootsie Rolls
Vegetable Oil
Large Marshmallows (get a pkg that hasn't been smooshed!)

Line a cookie sheet with parchment paper or foil.  Unroll the tootsie rolls ahead of time.  I used 2 skewers for dipping. 

When you are ready to melt your candy melts, make sure to heat them for 30 seconds, then stir, 20 seconds and then stir, 10 seconds and stir, if needed.  I added vegetable oil to mine to thin them out a bit, it makes dipping easier.  Just use your own judgment, add in 1 tsp and see if it is thin enough for your liking.  Stick your skewer into the middle of the marshmallow, dip in your melted candy, work quickly and cover the entire marshmallow.  Make sure to let ALL of the excess drip off over your bowl or cup.  I used a deeper small glass measuring cup so I didn't have to do a ton of work, there was enough I could dip it straight down and get it covered.   Sit it up right on the cookie sheet and then add the "handle", the tootsie roll to the top.  You may need to hold it for a couple of seconds so it will set.  It is that easy!  Refrigerate for at least 30 minutes before serving!
