Fluffer Nutter Cake

It is good to see you again!  It has FINALLY stopped snowing and being -30 degrees here in Nebraska.  Whoa, that is like, the kind of cold that makes your face instantly go numb and you can't even move your mouth to speak! I hope everyone is warming up, snow is melting and we are just around the bend from Spring!  (My favorite time of year btw)

I wanted to share my Fluffer Nutter Cake with you tonight.  I grew up eating peanut butter and honey or peanut butter fluff sandwiches!   Was it a favorite of anyone else?  I still indulge from time to time but BOY is it sweet!

Here we go with the recipe!  I was thinking Spring when I made this, and so I added pastel star sprinkles on top, you add what you want, even crushed peanuts if you want or nothing.  I needed sprinkles.  

Prepare one white cake.  From a box, from scratch,  no judging here.  Make it ahead or make it just before so you can pour the peanut butter mixture on while it is still warm if you want.  I poked holes in mine, the  mixture is a little thick so make BIG holes, or add a little milk to it to thin it a HAIR!

You will then need:

8oz jar of creamy peanut butter

13oz + 1/2 cup marshmallow creme/fluff

1, 8oz container of whipped topping

Combine peanut butter and 13 oz container of marshmallow creme together in a bowl and microwave until it has thinned out considerably.  If it doesn't thin out as much as you want, and you want it to for sure run into the holes on your cake, add 2T of milk and mix completely.  You may need to give it another 30 seconds in the microwave.  Make sure it is completely mixed and then pour and spread over the top of the cake.  Evenly spread it on top and lick the spatula!  Seriously, it is the nature of the beast.

Now, with a hand mixer combine 1/2 marshmallow creme and container of whipped topping.  Mix until combined and spread on top of the peanut butter mixture.  Cover it evenly and then dress the top how you like...IF you like.  Again, I would recommend licking the spatula.

Put this baby in the fridge for about 30 minutes before serving and BAM.  That is what I call heaven right there!

Banana Cream Poke Cake

Happy Spring!  I mean, happy "Calendar Spring" but still winter!  We had 2 inches of snow, but don't worry, it was 72 the next day.  If, in fact you were missing the snow it is OK, it snowed again 2 days later and we followed that up with some thunderstorms.  I mean, SERIOUSLY?  Mother Nature is like a mom, laying on the bed, grunting and groaning, twisting and shaking trying to get a pair of skinny jeans on from last year.  Ain't happening girl.  I just want Spring.  I just want thunderstorms, and sun, and flowers popping out of the ground and to put my patio together.  Is that SO much to ask when in fact, it is supposed to be Spring?

I digress..


I hope you all had a blessed Easter!  I cooked a feast, as usual, I needed about 10 more people to eat according the amount of food I made.  I just have this issue, I would rather way over cook and have days of leftovers, than to have someone walk away from my table still hungry.  No, it isn't going to happen.  However this year, I decided to stick with one dessert.  "Banana something" was requested.  I wanted easy, because as it happened, I was up hurling my guts out the entire night before Easter.  To much information?  Sorry.  I had no energy so, thankfully we were eating late and I could cook and rest and cook and rest.  Mom power is amazing.

This was an easy recipe I came up with, to satisfy the "banana something" request and still make it a little special for Easter!  I hope you love it!

1 yellow cake mix, prepared according to package direction.....
1 tsp baking soda
3 mashed bananas (if bananas aren't ripe, microwave them until soft, then mash!)
1 tsp banana extract (can use vanilla instead)

Prepare your yellow cake mix as directed.  In another bowl, mash bananas and baking soda together.  Add into the cake mix and add your extract.  Mix to completely combine.

Spray a 9x13 cake pan with nonstick cooking spray.  DO NOT PREHEAT YOUR OVEN!

Place cake in the oven and then turn oven on to 350 degrees F.   Bake at 350 F, for approximately 1 hour.  Let cake cool completely before moving on to the next step.

Poke holes in your cake.  I used the hand of a wooden spoon to make large holes for the thicker pudding!

2, 3.4 oz boxes banana pudding
milk

Prepare according to package directions and pour over entire cake, covering the entire top!  It will likely settle on top a bit, but that is a good thing!  Refrigerate for 1 hour!

Frosting:

7 oz container of Marshmallow Fluff
8 oz container whipped topping
1/2 tsp vanilla extract
Chocolate Jimmies or Nuts of your choice for the top!

Whip together all ingredients except sprinkles.  Whip until fluffy and completely combined.  Frost cake and add sprinkles or nuts of your choice!  Refrigerate until ready to serve and keep refrigerated after!

"Pits"tachio Pudding Pie

PANIC!

Yes, that is what I did when I realized I needed a dessert last night for company.  I wanted something green.  This is what I pulled from my cupboard.  I think we can all appreciate a semi-homemade convenient dessert in times like these, can't we?


When I decided to make this I had to name it.  Well when I was at my  parents over the weekend, we were going through old photos and boxes of "stuff".  (I have a craftier word for it).  We found this little project my sister Patty did in probably 3rd or 4th grade.  She was to write about her nickname, an embarrassing moment, a trip, getting lost, etc.  We laughed so hard at the things she wrote, and it reminded me that as a kid one of our uncles always called her "Pits".  Since her birthday is on St Patrick's Day and her nickname was "pits", what...that sounds horrible now.  Who wants to be called PITS?  I am sorry Patty, I am sorry you had to endure a childhood of being called after one of the smelliest parts of the human body.  We never thought of it like that then, but as an adult, my sincerest condolences!!  Here is the birthday girl herself with our mom.


So as I mentioned this is one of those throw together pudding pies, I just happen to like this one I made, ALOT.

1- 9 inch graham cracker crust  (feel free to make your own)
2- 3.4 boxes of Pistachio pudding
1- 7oz. container of Marshmallow Fluff
1 1/4 cups cold milk

Combine pudding, marshmallow fluff, and milk in a blender.  I find a blender way easier when it come to sticky marshmallow fluff.  Blend until a smooth consistency is achieved.  Pour into your prepared graham cracker crust and refrigerate at least 2-3 hours. 

Top with cool whip or fresh sweetened heavy cream!  (1 cup heavy cream, 2 tbsps. powdered sugar, 1 tsp vanilla extract)
