Italian Style Meatloaf

Good Saturday evening my friends!

Oh what a beautiful day it has been!  I have 3 of my grandchildren today and overnight and the sun is shining and they took a long nap and ahhh......




My husband has been asking me to make him Italian meatloaf and I have been poopoo'ing him off a bit.  THEN, I was asked by one of my dear YouTuber friends if I was interested in doing a meatloaf collaboration video.  She had gotten 4 of us together and we each would share a version of meatloaf we enjoy!  It was the perfect opporutniy to share my Italian Meatloaf AND make my husband happy!  Win! Win!


This meatloaf might seem a little out in left field for you but if you aren't ready to try it with the eggs, do it without.  I encourage you though, to try it.  While I shouldn't give such secrets away, this mixture will make meatballs that your family and friends will beg you to make again and again!

2lbs ground beef
1lb Italian sausage
1cup breadcrumbs (plain or seasoned)
1/2 cup shredded or grated Parmesan cheese2 eggs
2 tsp salt
1 tsp granulated garlic
1 tsp Italian seasoning
1/4 cup marinara sauce
4-6 hard boiled eggs

Topping:
1/2 cup mozzarella
1/2 cup marinara

Preheat oven to 350 degrees F. 
In a stand mixer or large mixing bowl combine all ingredients, for the meatloaf.  Mix with a hand mixer or let mix for 3-4 minutes (see video).

Place meat mixture into a backing pan and form into a loaf.  Make an indention in the middle and place eggs in a row.  Cover with meat mixture well to try and avoid it cracking.  If it does crack, no big deal!

Now to top the meatloaf, pour over 1/2 cup marinara, and bake for 66 minutes.  Remove meatloaf, add shredded mozzarella cheese and back another 10 minutes. 


Let rest for 5 minutes and enjoy!

Grandma Smith's Meatloaf

I call her mom (OK sometimes Ethel or...OK, maybe even pirate hooker once or twice), everyone else calls her Grandma, Mema, Nana Moo, and "ama".  Let me tell you a bit about my mom.  She grew up in the town they still live in, her father the county attorney and her mother a stay home mother.  She had 2 sisters and 2 brothers, all of whom have sadly passed away.  She had a cow.  She milked it AND rode it around town.  Yes, they lived in town with a cow.  And people shake their heads at society today?!? HA!  (had to mom)  She went to school, and college, she was a ....you ready for this?  Lingerie model for a few years, can you say HOTTIE?  Or should it be more like "scandalous"?  She fell in love with a tall, dark, handsome soldier from a foreign land, Philadelphia.  He was her boyfriends roomie in the hospital! WHAAAT?  He was stationed at the Army-Air Force base in Lincoln, NE.  She was a teacher, she intended to be a lawyer, but, life had other things in store.  Ten "other" things to be exact.  During her 82 years of life, and probably most of that as a mother, she became famous for her meatloaf.  Seriously though, I should call and make sure she isn't pregnant, the woman obviously doesn't know how it happens, and I want my info to be accurate....


Anyway, a fun little briefing on my mom.  Marlene is her name.  Actually, her name is Mary.  There was a typo on her birth certificate, and so, she is Marlene who was supposed to be Mary.  Her stripper name.......oh nvm, I forgot I wasn't going to tell that part.


Btw for anyone who is going to tell me that last comment was disrespectful, has NO idea the relationship I have with my mom.  She would shake her head and say "CAH-RIS" yes in 2 syllables and then just laugh..  So no worries.  My mom and I butt heads on a regular basis, but at the mature age of 83, even on the phone I can tell when she wants to say something, but just knows to zip up.  I do the same.  ALTHOUGH I am a bit more persistent, hopefully by the time I am her age, I will have matured.  I love her with all of my heart, and I will embarrass her, make her laugh, make her wonder if I was really switched at birth and her biological child is out there somewhere, and hug her and did I mention love her, forever!

As a kid and young adult I hated meatloaf.  I swear, if it wasn't meatloaf it was roast beast  every Sunday.  And God bless you mom but those roasts, were so dry, even the poor bay leaf on top was screaming for a drink.  Her recipe doesn't call for ketchup but I was sure she always used to put it on top.  I also think she used to triple this recipe because there is no way one loaf pan of meatloaf would cover 12 mouths!  One of my sisters, #3, had her write her recipe out and  then gave each of us kids, a towel she had the recipe printed on.  How cool??!?!

This meatloaf has only a few ingredients, and it may be close to some of your recipes, or seem like it would be a little blah, but it has great flavor and even if it didn't, it is my moms, you better love it too!  My brother Jimmy,  dreams about this stuff, he is coming next weekend and I think I will surprise him with a meatloaf!

Easy as it is, here it is!

2 lbs ground beef (I use VERY lean since the sausage has a lot of fat) ALSO her recipe says 3lbs, she has corrected it to 2.
1 lb pork sausage
1 cup finely chopped onion
2 eggs
1 cup milk
2 cups saltine cracker crumbs
salt and pepper to taste


Preheat your oven to 350 degrees F.  She says to basically mix it all together, being careful not to over mix, making the meat mixture tough.  I say saute your onions first, you do what you want.  Toss it all in a bowl, and get your hands in there, just like my mom did.  Mix to combine, place in a loaf pan and bake 1 hour.  I actually think mine took about 20 extra minutes.  Like I said I swear she used to put ketchup on top but, it isn't in the recipe.


So, from my mom's 7X10 kitchen to yours.................enjoy this special recipe that she nourished us with for years and years.  Love you ma!

SouthWest Turkey Meatloaf in Pepper Rings

I love the spring!  Singing birds, gentle breezes, the smell of fresh cut grass.  OhhhHhhHhhhHH!  It makes me happy.  Spring is my favorite season, there is nothing about it I do not love.  Oh wait, did I mention I do NOT love when on May 2nd, I wake up to 3 inches of snow?  HALT that love train. 


Spring and Summer usually also means lighter food.  I don't know about you all, but, I just am not as hungry in the summer.  To many fun things to be doing and the heat, oh LAWDY the heat.  You may not think Nebraska is humid, however, I am hear to tell you, it is more humid than anywhere I have lived.  Although after my experience last summer with Georgia humidity, I will never complain again.  See, I didn't complain, I just mentioned it was humid.   Seriously though, it is definitely time for some lighter options, health wise, and weather wise. 

We are ground turkey and chicken lovin' people.  My husband almost never knows when I substitute it for ground beef.  Even if he did notice, he wouldn't mind.  We love turkey burgers and chicken burgers too!  I have been making these little meatloaf stuffed pepper rings for a long time, I just decided it was a good time to share them, since my editor (my husband) informed me I needed too.  HA   I made these in the oven, but they can easily go on your grill.  I think they would make a great wee bit fancier option to a burger too!  I have this thing with cooked peppers.  If they aren't still a little crunchy I can't eat them.  Is it wrong that I peel the burger out, add it to a toasted bun, with slices of avocado, lettuce and tomato?  Well, it is just an OPTION. 

Now, while in my family we don't groove on black beans, you could certain add some into the meat mixture.  Just please don't tell me if you did.  OK?  Or you could add some corn.  Don't tell me if you did that either.  Cilantro?  Salsa?  The options are endless, but, I guarantee the flavor is awesome, and it will be a hit, no matter how ya serve it!

1 lb ground turkey
1 egg
1/2 cup bread crumbs
1 tbsp chili powder
1 tsp cumin
1/2 tsp salt
1/2 tsp pepper
1 tsp garlic powder
2-3 large bell peppers (any color)
1/2 cup grated cheddar, Monterrey jack,  OR pepper jack cheese

Preheat your oven to 350 degrees. 

Get your peppers sliced.  I needed 7 rings for my mixture.  Cut them so you et 2-3 out of each pepper.  I think I even got 4 out of one pepper.  Keep the tops and very bottoms you cut off.  Cut them as thick or thin as you want them.  How thick they are determines how much mixture you need so go with it.  I know you can make it work!


Chop about 2 tbsp of bell pepper VERY fine to add to meat mixture.

In a bowl combine turkey, egg, bread crumbs, chili powder, cumin, salt, pepper and garlic salt.  Stir in minced bell pepper as well. 

Lay the rings out on your baking sheet and fill them with your meat mixture.  Pat them flat so they fill up the entire pepper ring.   Bake for 30 minutes.   Remove pan and sprinkle cheese on top of each one. 


Put back in the oven that you have turned OFF, to melt cheese.

 
I hope you enjoy this delicious, healthy dish, that you can make in the oven OR on the grill.  Maybe even serve it along with some Mexican Rice!!

PS.  I had a few of these leftover a couple of days later.  I used a knife and cut them up pretty well and used them for tacos.  Holy..YUM!

Mealoaf, Smeatloaf, Double Beatloaf!

Name that movie?!?!  My husbands favorite all time movie!

 
Anyway, I have finally mastered the mystery that meatloaf has always been to me.  I never liked it, it seemed like nothing more than hamburger in a loaf pan, and I dreaded that my mother covered in in ketchup or tomato sauce. YUCK!  As I grew older, I never liked it any better, UNLESS it was drowning in brown gravy.  YUM-MO!  Another important Chris fact, I adore FAKE, straight from the little 33 cent package brown gravy!  One of my secret indulgences!  Since my husband loves meatloaf I took it on as my mission, to concoct and bake the perfect meatloaf.  I actually used a few tried and true tricks that I practice while making meatballs.  It isn't my meatball recipe but it COULD be used as such.  You may find some of the ingredients peculiar.  

Milk. The acid helps break up the proteins in the meat to make it tender and less clumpy.  

Hot sauce.  People always assume the addition of hot sauce in any recipe means its hot and they don't like spicy and they totally disregard it.  Please, understand, the addition of the hot sauce, just adds another layer of flavor.  It Is not enough to even taste any hot, trust me.  

Poultry seasoning, is my secret ingredient and if my husband knew I put it in, he would DIE because he claims to hate it.  Never seems to inhibited to throw some meatloaf down his ol hatch!


LOTS of breadcrumbs!  Celery, carrot and onion, is easiest food processed, you can even cook it in some boiling water first if you choose.  I must hide veggies in my husbands food because he hates them.  Have you ever considered the ridiculousness that is hiding veggies from a 45 year old man?  I know....spoiled rotten.  If you choose to omit this step or just used finely chopped onion, I encourage you to soften it until translucent in olive oil first.  A nicely cooked meatloaf deserves more than a hunk of raw onion to chomp down on.  

The most important however is how you mix it.  Use a hand mixer or stand mixer and let the entire mixture mix for a good 3-4 minutes.  It changes the consistency of the meat and makes the absolute perfect meatloaf.  I mean this is like, THE STEP you must not skip.  


ADJUST your salt and pepper to taste, I happen to enjoy salt, way to much, so you might want to use half as much and salt individual portions to taste.  



1 lb ground beef
1 lb ground turkey
2 eggs
1/3 cup parm cheese
2 cups fresh breadcrumbs (seasoned or plain)
1 tbsp Worcestershire sauce
1/4 tsp poultry seasoning
1 tbsp fresh chopped parsley-1tsp dried, try and go fresh!
1 tbsp salt
1 tbsp milk
1 tbsp pepper
1 tsp hot sauce
1 carrot + 1 rib of celery + 1 quarter of medium onion (food processed with 1/4 cup water OR grated FINELY into mixture)


Mix all ingredients EXCEPT ground meat together well, add ground beef and ground turkey and mix well.  Using your hand mixer, blend mixture for 3-4 minutes.  Or put into your stand mixer and let it rip for 3-4 minutes Turn into loaf pan, or form loaf shape and put in 9x13 pan.  You can also divide into mini meatloaves.  
Top with ketchup mixed with brown sugar,  BBQ sauce or leave plain to top with brown gravy!

Bake 350 degrees for 45 min - 1 hour.  Let rest for 15 min before slicing.

So.....GO, enjoy some good old fashioned meatloaf!  Maybe add some mashed potatoes, some nice fresh green peas?  And don't forget plenty of brown gravy!


Sing while you cook this week.  Make your family wonder if you have gone crazy!
